    This is a nice version of Thai Green Curry but everyone knows that if its
    authentic you need Thai apple eggplant and Thai pea eggplant, this version
    also should use palm sugar and there are no Onions in authentic Green
    Curry. But then again this is a Thai restaurant in Dublin, Ireland, you
    can’t expect to get authentic ingredients, just an Irish version of Thai
    Green Curry..

    Why is he not using palm sugar though? and why is he using normal oil
    instead of cooking the paste with broken down coconut milk? Still looks fit
    though ;)

    Very nice krub! Like the gentle way he cooked.

    David is right. Traditionally way we slowly cook green curry & a little
    bit of coconut milk first to break it down so the curry curry soup water
    turn greenly oily which bring out fantastic aroma and flavor before adding
    more coconut milk and the rest.
