Roast Chicken Recipe with Buttermilk



A quick & easy chicken recipe, roast chicken recipe with buttermilk. Legs can be replaced with wings in this chicken recipe.

Combine buttermilk, spices and honey in a large bowl. Add chicken, garlic, potatoes and onion. Season and toss to combine to combine. Tip into a large baking paper-lined shallow oven tray. Press into a single layer. Roast at 220C fan-forced for 30-40 minutes or until chicken and potatoes are golden and cooked through. Rest in pan 5 minutes. Serve with rocket leaves and lemon wedges.

Ingredients:
1½ cups buttermilk
½ teaspoon Woolworths Select turmeric
2 teaspoons Woolworths Select paprika
1 tablespoon Woolworths Select honey
8 chicken lovely legs, from the poultry counter
4 cloves garlic, unpeeled, bruised
8 small baby cream delight potatoes, unpeeled cut into 1cm-thick rounds
1 red onion, thinly sliced into rounds
Baby rocket leaves and lemon wedges, to serve

Directions:
1. Preheat oven to 220°C fan forced. Combine buttermilk, spices and honey in a large bowl. Add chicken, garlic, potatoes and onion. Season and toss to combine to combine.
2. Tip into a large baking paper-lined shallow oven tray. Press into a single layer.
3. Roast for 30-40 minutes or until chicken and potatoes are golden and cooked through. Rest in pan 5 minutes.
4. Serve with rocket leaves and lemon wedges.

Tip1: You can replace the buttermilk in this recipe with ¾ Greek yoghurt and ¼ full cream milk
Tip2: You can replace the lovely legs with whole chicken wings in this recipe
