Light Thai Chicken Stir Fry Recipe ~ Noreen’s Kitchen



After a holiday that was most likely filled with a bit of over indulgence, it always seems to be the trend that we start to try and eat a bit lighter in the new year. So with that in mind, I have made a delicious light Thai chicken stir fry filled with the flavors that you love and you are not going to miss a thing!

This is chock full of delicious Thai flavor. Don't let the large ingredient list put you off. I have tried to make this as simple as possible and give you a really great flavor like your favorite Pad Thai. You can mix and match but do not leave out the soy, the fish sauce or the ginger and garlic. Those are integral.

This was so delicious! We served ours with some Japanese ramen noodles and it was perfect!

    looks good,,, btw has Rick ever say he didn’t like anything you make? Can’t
    imagine since every time I watch your videos everything always sounds and
    looks so good… My grandfather use to tease my grandmother that she is why
    he is not Mr. Olympic because she never cooks anything bad,, they have
    since past but there are times Rick makes me giggle at how he picks at your
    food while your not looking

    I’m sorry Thai restaurants are hard to find in your area. Come see me in
    Seattle and I will treat you and your family to some fantastic Thai! I
    have never mastered Thai cooking at home — we always go out when we are
    craving it, but have several options within a 3 mile radius of our home).
    I would love to go out for Thai with you!!!! P.S. Tom Kha Gai and Larb
    Gai are our go-to’s, and then we alternate ordering Pad Woon Sen and Rad
    Na. Come visit us! :)

    Noreen, you rock!!!! I gained 7 pounds over Christmas, ARGH, far to much
    drink, and too much good food. ( Indians, Thai, steak, with peppercorn
    sauce and cream etc) But this is just the ticket, as I CRAVE Thai, Chinese,
    Indian, etc basically take out food, when I am trying to be good, which I
    try and do in January. Could you try a low fat Indian Biryani? Chinese
    anything? Hell, any take out food low fat, would be great! If not, I’ll
    just make this every night this month. Totally Slimming World friendly, oil
    as a healthy extra. Also, do you in America have Slimming World like we do
    in the UK? Thanks so much for this!!! Xx

    If yu can’t get the paste yu can get the basil and others in the frozen
    section in cubes
    I use Dorot but there are other brands too

    Our area is huge Vietnamese. We can get pho any time of the day or night. I
    think I would add some basil. This looks great!
