How to fry chicken, Jamaican style
Ingredients
2 lbs chicken
1 tsp. salt
1 pk. Maggie chicken seasoning
1 1/2 tsp. paprika
1/2 tsp. black pepper
1 tsp. dried basil leaves
1 clove garlic
Enough oil for frying
Method
step1
If not using pre-cut chicken parts, cut the chicken into medium pieces. Remove the chicken lights. Remove the skin (optional)
step2
Wash in vinegar and water or lime and water solution. This is to remove the slime from the chicken meat. Then put to drain for 5 minutes.
Step3
Put the chicken into a container and season with the following ingredients:
1 tsp. salt
1/2 tsp. black pepper
1 1/2 tsp. paprika
1 tsp. dried basil leave
1 pk. Maggie chicken seasoning (sold on Amazon)
Enough oil for frying
Method
step1
Put a Dutch pot or skillet to hot over medium heat. Add the oil, lower the flames. Allow the oil to hot . Put the clove of garlic into the oil; let it remain there throughout the frying process.
step2
When the hot becomes hot. add 4-5 pieces of meat; depending on the size of the pot. Fried each side for 4-5 minutes or until cooked through. Continue the steps until completed.
*Ideas*
Ideal with brown bread, and vegetables, e.g., lettuce, and freshly sliced tomatoes
If you want gravy
Minced piece of hot pepper/green sweet pepper/onion/1 stalk scallion/thyme/few grains pimento (allspice)1 clove garlic, into a food processor.
Throw off most of the oil, leaving a small amount. Return the pot to the heat, scrape the minced seasonings into the container with the chicken drippings along with 1 cup water, then pour it into the pot and simmer until becomes thicken (gravy)
If you want Fricassee chicken, put the fried chicken pieces into the pot and simmer until the gravy thicken.
