    use bacon we cook down ten pounds and end up with a pound of nice lean meat
    when it’s rendered off.

    Marinade does not actually make the meat any more tender, it just
    penetrates the surface. The only thing in the marinade which actually
    penetrates into the meat would be the salt, and if there is too much salt
    it is no longer marinade but “brine”. You should cut slits into the meat so
    that the marinade actually penetrates and inject the meat with any fluids
    used in the marinade. Alcohol is not a great idea in a marinade as it burns
    the outside of the meat so less flavor from the marinade penetrates, the
    alcohol should be cooked out of that IPA before the IPA is used to
    marinade. This is still a good marinade, the salt and garlic will
    penetrate, hopefully the IPA isn’t very high alcohol content.
